Parchment paper a stand mixer with whiskattachment a pastry bag with large star tip and a kitchenpropane torch will come in handy too although theyaren't absolutely necessary.For the pastry1 1/2 cups allpurpose flour1 tablespoon granulated sugar1/2 teaspoon salt1/2 cup shortening1/4 cup icecold waterFor the vanilla cream2 cups heavy whipping cream1/2 vanilla bean1 1/2 tablespoons cornstarch3 tablespoons water2/3 cup granulated sugar6 large egg yolks (reserve whites for meringue)For the meringue6 large egg whites1 1/2 cups granulated sugarFor the tarts or pie1/2 cup Skippy creamy peanut butter2 bananas sliced 1/4 inch thickPreheat oven to 325 degrees.To prepare the pastry: Sift the flour sugar and salt togetherin a mound. Using your fingers crumble the shortening intothe flour mixture until the shortening is in peasize pieces.Make a well in middle of the mixture and add the water; mixuntil the dough just comes together. Wrap in plastic andrefrigerate for 5 minutes. Roll the dough out on a flouredsurface (or between 2 pieces of parchment paper) to about1/8inch thickness. Use a 4inch ring cutter to cut out 8circles and line the bottom and sides of the tart pans.(Alternately use the whole sheet of rolled pastry to line a 9inch pie pan. Freeze for 10 minutes. Line the pastry withfoil and fill with dry beans; bake for 45 minutes or untilgolden brown.)To prepare the vanilla cream: Place the cream and vanillabean in a heavy saucepan and bring to a boil.
