Figuratively speaking.The shop specializes in chocolate drinks longestablished in Mexico (going back a couplethousand years) but new to Vancouver.The name of their shop Chocoatl(pronounced chocoatel) comes from theAztecs. "There are two theories about themeaning" says Velgis. "Choco means bitter.'Atl' could mean water as they didn't usemilk. The other theory is that the wordmimics the "chocochocochoco" sound thewooden molinillo makes when it's whiskingfoam in a chocolate drink" he says. "It usedto be a delicate art. Now we have steamermachines."At the shop chocolate lovers can try hotchocolate made with chocolate infused withlavender rose champurrado (corn) spicesor orange. They do the infusing processthemselves. His chocolates are single originproducts meaning they are from one farm."I have friends in Central America. I havemy importers" he says.Soon they will be making their ownchocolate in Mexico he says. "Why? BecauseI can do it. It's not that much fun buying italready made. You don't get the quality youwant. If I make it myself I can choosewhere the cocoa beans come from to get a specific taste.
